Assyrtiko
Assyrtiko, AHS-SEER-TEE-KOH, the great white grape of Greece, used to make a structured white wine suitable for mid-term aging. Its most noble expression is found on the island of Santorini (Xantos) where it is cultivated using “bush” or “basket” training.
Boutari’s Santorini label is 100% Assyrtiko vinified in stainless-steel vats. Its Kallisti is made from 300-year-old Assyrtiko vines and is gently aged in French oak. The nuanced Kallisti can age for 7-10 years before reaching its peak expression.
Assyrtiko is also used in Domaine Roxane Matsa.
