Kallisti
Grape variety: Assyrtiko
Boutari Kallisti is the first fumé wine to be crafted in Greece. Its name literally translates from Greek to the fairest, and was inspired by Santorini’s ancient name. This is Boutari’s barrel-fermented version of the Santorini A.O.C.
The vineyard of Santorini is one of the oldest in Greece (300 years old). The vines are not grafted on American rootstocks because phylloxera (vine louse) has never “attacked” the island.
